Want a healthy version of Grandma’s favorite zucchini bread? Well, you have come to the right place!

Ingredients

  • Maple syrup
  • Coconut oil
  • Large eggs
  • Dairy-free plain or vanilla yogurt
  • Pure vanilla extract
  • Unsweetened applesauce
  • Coconut, almond, or oat flour
  • Flax seed meal
  • Cinnamon
  • Baking powder
  • Baking soda
  • Zucchini
  • Sea salt

Instructions

  1. Before mixing the ingredients, preheat your oven to 350 degrees. Grab your grater and grate the zucchini, set aside.
  2. In one of the large bowls, mix together the maple syrup, coconut oil, eggs, yogurt, vanilla, and applesauce. Mix all of the dry ingredients — flour, cinnamon, baking powder, baking soda, and salt in another bowl. Incorporate the wet and dry ingredients together and then add the zucchini.
  3. Once the ingredients are mixed together, grab your loaf pan. Spray the pan with cooking oil and then pour in the batter. Bake for 45-60 minutes, or until cake tester comes out clean. Cool completely.
