Ingredients

Scale
  • 2 cups of gluten free flour blend (I prefer GF Jules)
  • 1 ¼ teaspoon salt
  • ¾ teaspoon baking soda
  • 2 sticks (8 oz) unsalted butter or dairy free like earth balance
  • 1 cup granulated sugar
  • ⅔ cup of light brown sugar packed (or coconut sugar)
  • 2 teaspoons pure vanilla extract
  • 2 large eggs
  • 2 cups of dairy free chocolate chips (I love Lakinto brand)
  • 1 cup finely chopped walnuts (optional)

Instructions

  1. Preheat the oven to 375 degrees.  Line two baking sheets with parchment paper.
  2. Whisk together flour, salt, and baking soda.  Working with a stand mixer or a hand mixer in a large bowl, beat the butter on medium speed for 1 minute until smooth. Add the sugars and beat for another 2 minutes.  Beat in the vanilla. Add the eggs one at a time and beat for 1 minute each.
  3. Reduce the speed and add in the dry mixture in 3 equal portions, letting each one to incorporate fully.
  4. Spoon the dough by rounded tablespoonfuls onto the prepared baking sheets, leaving about 2 inches of space between cookies.
  5. Bake one sheet at a time for 10-12 minutes until the cookies are brown around the edges and golden in the center.
  6. Allow to cool on a baking rack.
  7. Repeat with the remainder of the dough and baking sheets.
