Inspired by the $250 Nieman Marcus Cookie Recipe

So there is a story circulating about a woman who was lunching at the Nieman Marcus cafe in Dallas, Texas.  She enjoyed the chocolate chip cookies so much that she asked for the recipe.  For “only two-fifty” the waitress replied.  But when the woman was presented the bill, the total was nearly $300.  Turns out the recipe cost $250 as the story goes.  In 1997 Nieman Marcus decided to end the myth and create the cookie recipe distributing it for free.  I made my own adaptations for gluten and dairy allergies.

Ingredients

  • 1 cup non-dairy butter (or dairy)
  • 1 cup dark brown sugar, packed
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 ½ cups gluten free oats
  • 2 cups gluten free flour blend (like GF Jules)
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 8 oz dairy free dark chocolate chips (I like Lakanto monk fruit sweetened chocolate chips or Human vegan chocolate)
  • 2 oz grated vegan dark chocolate bar (Like HU brand – I used dark chocolate sea salt)

Instructions

Heat oven to 375 degrees

Cream together butter and both sugars.  Add eggs and vanilla.

Finely grind oats in a blender or food processor.  Combine the oats, flour, salt, baking powder and soda in a medium bowl, and slowly add it to the wet ingredients.  Beat until just combined.  Grate the chocolate bar using a microplane grater and add it, along with the chocolate chips to the batter.  Mix to combine. 

Drop by heaping tablespoonfuls, 2” apart, on a parchment lined cookie sheet.  Bake for 10-12 minutes.
