Ingredients:

  • 1 cup gluten free rolled oats
  • 1 ⅓ cup gluten free flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 2 large eggs
  • ½ cup maple syrup
  • ⅓ cup almond butter (I love Revival brand or this one from amazon)
  • 1 teaspoon vanilla
  • ½ cup coconut oil, ghee, or butter
  • 1 cup stevia sweetened white chocolate baking chips (I Love Lillys Brand)
  • ½ cup chopped roasted macadamia nuts
  • ½ cup cranberries or dried cherries (optional)

Instructions

Preheat the oven to 350 degrees.  

In a large bowl, combine the oats, flour, baking soda, salt and stir.  In a separate bowl combine the eggs, maple syrup, almond butter, vanilla, and oil.  Mix together and then add to the dry ingredients.  Once incorporated, add the white chocolate chips, nuts, and cranberries if using. 

Prepare a baking sheet with parchment paper.  Drop 1 tablespoon full of cookie mixture and space 2 inches apart.  Bake for 10-12 minutes.  Allow to cool for two minutes on the sheet before moving to a wire rack to cool completely.  Repeat with remaining mixture.

Store in an airtight container for up to 1 week.
