- Preheat the oven to 400 degrees. Prepare a baking sheet with parchment paper
- Carefully unroll 1 roll of puff pastry on a cutting board. Cut once lengthwise in half and then into 4 equal sections per half. You will have 8 total squares per roll (each strudel takes two halves – so each roll will give you 4 strudels).
- On one square, spread 1 tablespoon of preserves on the puff pastry leaving a ¼” boarder around the square. Repeat with the remaining squares. Place the top sheet of the puff pastry on top of the preserved square and use a fork to bind the puff pastry together – crimping all the edges. Repeat with the second roll of puff pastry.
- Whisk together 1 egg and 1 tablespoon of non dairy milk and brush all over the top of each strudel.
- Bake at 400 degrees F for 10-12 minutes or until golden.
- Allow to cool completely
For the Icing: whisk together powdered sugar, vanilla, and milk until you reach a desired consistency. Drizzle all over the puff pastry
