Lamb Meatballs over honey whipped feta

Served great as an appetizer or as an entree with a big Greek salad

 

Ingredients

Lamb Meatballs:

  • 1 lb. ground lamb
  • 1 lb. ground beef
  • 1 teaspoon cumin
  • 1 tablespoon dried oregano
  • Juice of 1 lemon
  • 1 tablespoon of kosher salt
  • 2 eggs, whipped
  • 1 cup seasoned gluten free breadcrumbs
  • Freshly ground black pepper

Honey Whipped Feta

  • 1 block feta cheese
  • 2 tablespoons cream cheese or dairy free cream cheese
  • Zest of 1 lemon
  • 1 tablespoon honey
  • Juice of ½ lemon
  • 1 teaspoon kosher salt

Instructions

Meatballs: 

  1. Preheat the oven to 350 degrees.
  2. Mix all the ingredients together well.  Take two tablespoons of the meat mixture and form into a ball. Repeat with the remaining meat mixture.
  3. Place on a rack on a baking sheet.
  4. Bake for 35-45minutes until done.  (The meatball will resist when touched with your finger)

Served with honey whipped feta

Honey Whipped Feta: 

Place all ingredients in a food processor and puree until smooth.
