Family Favorite Creamy Tuscan Salmon

Salmon dinner, creamy tuscan salmon, clean eating dinner

Creamy, savory, and frankly just delicious. This creamy Tuscan salmon with spinach and sundried tomatoes is sure to please a crowd! I make this dish all the time for my family and they gobble it up. I also love serving it with bowtie past (gluten free of course) and toss it in the sauce just before serving. Other great starch options are polenta, rice, or risotto; the sauce is amazing on just about everything!

Ingredients

  • Salmon filets
  • Good olive oil
  • Imported butter or dairy-free butter
  • Garlic cloves
  • Shallots
  • Vegetable broth
  • Jarred sun-dried tomatoes in oil, drained or fresh grape tomatoes
  • Sofi dairy-free cheese
  • Salt
  • Pepper
  • Baby spinach leaves
  • Fresh parsley or basil
  • Parmesan cheese (optional)
  • Pasta or rice (optional)

Instructions

Cooking the salmon

  1. Heat the olive oil in a large skillet over medium-high heat. 
  2. Season the salmon filets generously on both sides with salt and pepper, and sear in a hot pan, flesh-side down first, for 5 minutes on each side or until cooked to your liking. 
  3. Once salmon fillets are cooked, remove them from the pan and set aside.  Keep warm.

 

Preparing the creamy sauce

  1. In the same pan, melt the butter in the remaining cooking juices, add in the shallot and cook until translucent. Add in the garlic and fry until fragrant.
  2. Add the sun dried tomatoes and fry for 1-2 minutes so they release their flavors. 
  3. Finally, pour the vegetable broth and dairy free cheese and stir until incorporated. Should resemble a cream sauce texture and color. Feel free to add more cheese. Bring to a gentle simmer, while stirring occasionally. Season the cream sauce with salt and pepper.
  4. Add in the baby spinach and allow to wilt in the sauce, add in the parmesan cheese if using. Allow cream sauce to simmer for another minute until cheese melts through.
  5. Add the seared salmon filets back into the pan, sprinkle with fresh herbs, and spoon the sauce over each filet.

Notes

This is served best over rice or pasta. I chose a brown rice bow tie pasta and it was amazing! Make sure you taste the sauce and pasta before you serve it and feel free to add more salt and pepper.
