Lebanese Fattoush Salad

Ingredients

  • 1 large head romaine lettuce chopped
  • 46 campari or small tomatoes diced
  • 23 Persian cucumbers quartered
  • 5 radishes sliced thin
  • 1 medium red pepper diced
  • ¼ cup chopped parsley

Dressing:

  • 3 Tablespoons good quality olive oil
  • 2 Tablespoons of lemon juice
  • 3 garlic cloves minced
  • 1 teaspoon of sumac
  • 12 teaspoons of pomegranate molasses
  • ½ teaspoons dried oregano
  • ½ teaspoon Kosher salt
  • Freshly cracked black pepper to taste

Fried Pita Bread:

  • 12 gluten free or regular pita bread cut into triangles
  • 3 Tablespoons of olive oil
  • Kosher salt to taste
  • Freshly cracked black pepper to taste

Instructions

Make the dressing: Whisk together the lemon juice, garlic, sumac, pomegranate molasses, dried oregano, salt and pepper.  Slowly stream in olive oil, whisking continuously until emulsified.  Season to taste with salt and pepper.  Set aside

Fry the pita bread: In a large skillet, heat olive oil on medium heat.  Add the pita bread and fry on both sides until golden in color.  Allow to cool on a paper towel lined baking sheet.  Season with salt and pepper while still hot.

Place lettuce, tomato, cucumber, red pepper, radish, and parsley in a large serving bowl.  Add the pita bread and toss in the dressing just before serving.
