Best Gluten Free Chocolate Chip Cookie
Gluten Free / Dairy Free
Makes 2-3 dozen
The perfect GF chocolate chip cookie will find you very satisfied. Moist, delicious and guilt free.
- 2 cups of gluten free flour blend (I prefer GF Jules)
- 1 ¼ teaspoon salt
- ¾ teaspoon baking soda
- 2 sticks (8 oz) unsalted butter or dairy free like earth balance
- 1 cup granulated sugar
- ⅔ cup of light brown sugar packed (or coconut sugar)
- 2 teaspoons pure vanilla extract
- 2 large eggs
- 2 cups of dairy free chocolate chips (I love Lakinto brand)
- 1 cup finely chopped walnuts (optional)
- Preheat the oven to 375 degrees. Line two baking sheets with parchment paper.
- Whisk together flour, salt, and baking soda. Working with a stand mixer or a hand mixer in a large bowl, beat the butter on medium speed for 1 minute until smooth. Add the sugars and beat for another 2 minutes. Beat in the vanilla. Add the eggs one at a time and beat for 1 minute each.
- Reduce the speed and add in the dry mixture in 3 equal portions, letting each one to incorporate fully.
- Spoon the dough by rounded tablespoonfuls onto the prepared baking sheets, leaving about 2 inches of space between cookies.
- Bake one sheet at a time for 10-12 minutes until the cookies are brown around the edges and golden in the center.
- Allow to cool on a baking rack.
- Repeat with the remainder of the dough and baking sheets.
