How did the recipe come to be the “World’s Greatest Chicken Salad?”
I found myself going back to Cafè Patachou in Indianpolis, Indiana several times every week. I couldn’t get enough of their famous chicken salad. It was seriously crave worthy. I decided to try my hand to make it at home using ingredients you probably already have in your pantry. The key to saving time while adding flavor is to use a store-bought rotisserie chicken. No need to waste time and energy roasting your own. I suggest shredding the chicken while it is still warm and save your safe some forearm strength! I love the addition of dijon mustard to the mayonnaise which adds just a hint of spice. As in most of my recipes, I don’t shy away from kosher salt; which helps to highlight the other flavors!
