When I am craving something warm and comforting, this is a go to and family favorite. It has all the flavors of lasagna without that post meal heavy feeling. I love using Jovial brand gluten free lasagna noodles.
In a large saucepan over medium heat, add olive oil and onion, cook until translucent (about 3-5 minutes)
Add garlic, Italian seasonings, tomato paste, and calabrian chiles. Cook until tomato paste is slightly browned.
Add Italian sausage and cook, breaking up the meat with the back of a wooden spoon. Add kosher salt and black pepper.
Add can of tomatoes and vegetable broth. Bring to a simmer and allow to simmer for 15 minutes.
Meanwhile, cook the lasagna noodles according to the package directions. When the noodles are almost done, drain and allow to cool.
Note: I like to cut my noodles into ½” strips to make them more manageable. Add the noodles back to the soup, add cheese, and spinach and stir until just wilted. Adjust the seasoning and serve with more parmesan cheese and fresh parsley.
